  • 8 slices of soft white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter, softened (optional)

  1. Wash the cucumber thoroughly and slice it thinly using a sharp knife or mandoline. Pat the slices dry with a paper towel to remove excess moisture.
  2. In a mixing bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well combined.
  3. Lightly butter one side of each slice of bread if desired. Spread a generous layer of the cream cheese mixture onto the unbuttered side of four slices of bread. Arrange the cucumber slices evenly over the cream cheese and top with the remaining bread slices, buttered side down.
  4. Trim the crusts off the sandwiches and cut each into quarters or smaller rectangles. Arrange on a serving platter and garnish with additional fresh dill or chives if desired.

Notes

Choose soft bread for best results. Assemble sandwiches just before serving to prevent sogginess. For variations, add thinly sliced radishes or smoked paprika to the cream cheese spread.
