Ingredients

Ingredients
  • 8 slices of white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter, softened

Method

Instructions
  1. Start by lightly buttering each slice of bread. This helps to create a barrier that prevents the bread from becoming soggy due to the moisture from the cucumber slices.
  2. In a mixing bowl, combine the softened cream cheese, chopped dill, lemon juice, salt, and pepper. Mix until smooth and well combined.
  3. Spread a generous layer of the cream cheese mixture onto each slice of bread. Place the thinly sliced cucumbers evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread to form sandwiches.
  4. Using a sharp knife, carefully cut off the crusts from each sandwich. Then, cut each sandwich into smaller, bite-sized pieces, such as triangles or rectangles. Arrange them on a serving platter and garnish with additional fresh dill if desired.

Notes

Choose English cucumbers for fewer seeds and milder flavor. Assemble sandwiches just before serving to maintain freshness. For a variation, add smoked salmon or avocado slices for extra flavor.
