  1. Prepare the Simple Syrup: In a small saucepan, combine the sugar and 1/2 cup water. Heat over medium heat, stirring constantly until the sugar completely dissolves. Remove from heat and add the mint leaves. Let steep for 15-20 minutes to infuse the mint flavor, then strain out the leaves.
  2. Blend the Watermelon: Place the cubed watermelon in a blender and blend until completely smooth. For an extra smooth texture, strain the watermelon puree through a fine-mesh sieve to remove any pulp.
  3. Combine Everything: In a large pitcher, combine the watermelon puree, fresh lemon juice, mint-infused simple syrup, and 4 cups of cold water. Stir well to combine.
  4. Chill and Serve: Refrigerate for at least 1 hour to allow the flavors to meld together. Serve over ice with fresh mint leaves, watermelon slices, and lemon slices for garnish.

Notes

Choose ripe watermelon that feels heavy for its size and has a creamy yellow spot. For more mint flavor, gently muddle the mint leaves before adding to the simple syrup. The drink tastes even better when made a few hours ahead to allow flavors to develop.
