  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

  1. Prepare the Cajun Seasoning: In a small bowl, combine all the seasoning ingredients - paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, and salt. Mix thoroughly and set aside.
  2. Cook the Chicken: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season the cubed chicken with half of the Cajun seasoning mixture. Cook chicken until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  4. Create the Creamy Sauce: Pour in chicken broth and bring to a simmer. Add spaghetti directly to the skillet, breaking it in half if needed. Cook according to package directions, stirring occasionally to prevent sticking.
  5. Combine and Finish: Once pasta is al dente, reduce heat to low. Stir in heavy cream, remaining Cajun seasoning, and the cooked chicken. Add cheddar and Parmesan cheeses, stirring until melted and creamy. Adjust seasoning with salt and pepper if needed.
  6. Serve and Garnish: Garnish with fresh chopped parsley and serve immediately.

Notes

Start with less cayenne if sensitive to spice. Use freshly grated cheeses for better meltiness. Dish reheats well - add splash of cream when reheating. Can substitute gluten-free pasta or dairy-free alternatives.
