Instructions
- Prepare your breading station with three shallow bowls. In the first bowl, place flour seasoned with salt and pepper. In the second bowl, beat the eggs. In the third bowl, combine panko breadcrumbs, parmesan cheese, garlic powder, Italian seasoning, and paprika.
- Cut zucchini into uniform ½-inch sticks. Pat them completely dry with paper towels – this is crucial for maximum crispiness!
- Dredge each zucchini stick in flour, shaking off excess. Dip in beaten eggs, then coat thoroughly in the panko-parmesan mixture, pressing gently to adhere.
- Arrange breaded zucchini sticks in a single layer in your air fryer basket, leaving space between them. Lightly spray with cooking oil.
- Air fry at 400°F for 10-12 minutes, flipping halfway through, until golden brown and crispy. Work in batches if needed to avoid overcrowding.
- While the fries cook, whip up your creamy dipping sauce by combining all ranch dip ingredients in a small bowl. Chill until ready to serve.
Notes
Dry zucchini thoroughly before breading for maximum crispiness. Don't overcrowd the air fryer basket. Serve immediately while still crispy. Reheat leftovers in air fryer, not microwave.
