- Pat the chicken drumsticks completely dry with paper towels. This is crucial for achieving crispy skin. Place them in a large bowl and drizzle with olive oil, tossing to coat evenly.
- In a small bowl, mix salt, pepper, garlic powder, paprika, and onion powder. Sprinkle the seasoning mixture over the chicken and rub it into all surfaces. For extra crispy results, add the optional cornstarch and baking powder to your seasoning mix.
- Preheat your oven to 400°F (200°C). Arrange the drumsticks on a wire rack set over a baking sheet. This allows air to circulate around the chicken for even cooking and maximum crispiness. Bake for 25 minutes.
- Remove the chicken from the oven and brush generously with BBQ sauce on all sides. Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is beautifully caramelized.
- For extra crispy BBQ drumsticks, switch your oven to broil for the last 2-3 minutes. Watch carefully to prevent burning. The sauce should bubble and create a glossy, sticky glaze.
