  • 1/4 cup grated Parmesan cheese

  • 1 teaspoon paprika

  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon water
  • Cooking spray (avocado or olive oil)

  1. Wash the zucchinis and pat them completely dry with paper towels. Cut off the ends, then slice each zucchini into fry-shaped sticks about 1/2-inch thick and 3-4 inches long.
  2. In one shallow bowl, whisk together the almond flour, Parmesan cheese, garlic powder, paprika, onion powder, salt, and pepper. In another bowl, beat the egg with 1 tablespoon of water to create an egg wash.
  3. Working in batches, dip the zucchini sticks into the egg wash, letting any excess drip off. Then roll them in the almond flour mixture, pressing gently to ensure an even coating. Place the coated fries on a plate or baking sheet.
  4. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Arrange the zucchini fries in a single layer without overcrowding. Lightly spray the tops of the fries with cooking spray.
  5. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy. Remove the fries from the air fryer and serve immediately while they're hot and crispy.

Notes

Dry zucchini thoroughly for crispy results, don't overcrowd the air fryer, and serve immediately while hot. Can be baked in conventional oven at 425°F for 15-20 minutes if air fryer is not available.
