  • 1/4 cup all-purpose flour

  1. Prepare the zucchini by washing and drying them thoroughly. Cut off the ends, then slice each zucchini into 1/2-inch thick sticks, similar to French fry shape.
  2. Set up your breading station with three shallow bowls. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. Dredge each zucchini stick first in flour, shaking off excess. Then dip in the beaten egg, allowing excess to drip off. Finally, coat thoroughly in the breadcrumb mixture, pressing gently to adhere.
  4. Preheat your air fryer to 400°F (200°C). Arrange the coated zucchini fries in a single layer in the air fryer basket, making sure they don't overlap. Lightly spray with cooking spray or brush with olive oil.
  5. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy. Serve immediately with your favorite dipping sauce.

Notes

Dry zucchini thoroughly after cutting to help coating stick better. Don't overcrowd the air fryer basket - cook in batches if necessary. Try seasoning variations like Italian seasoning or cayenne pepper for different flavor profiles.
