- Wash and dry the zucchinis thoroughly. Trim off the ends and cut each zucchini into fry-shaped sticks, about 1/2-inch thick and 3-4 inches long. Pat them completely dry with paper towels - this is crucial for achieving maximum crispiness!
- Set up three shallow bowls. In the first bowl, whisk together the flour, cornstarch, and a pinch of salt. In the second bowl, pour the plant-based milk. In the third bowl, combine panko breadcrumbs, nutritional yeast, garlic powder, onion powder, paprika, salt, and pepper.
- Working with one zucchini stick at a time, coat it in the flour mixture, shaking off excess. Dip it into the plant-based milk, then coat thoroughly with the breadcrumb mixture. Place on a baking sheet and repeat with remaining zucchini sticks.
- Preheat your air fryer to 400°F (200°C). Arrange the breaded zucchini fries in a single layer in the air fryer basket, making sure they don't overlap. Lightly spray with cooking oil. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Remove the zucchini fries from the air fryer and serve immediately while hot and crispy. They're perfect with your favorite dipping sauces!
