- In a small bowl, mix the softened cream cheese and powdered sugar until smooth. Set aside.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. In another bowl, combine the vegetable oil, egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners. Spoon half of the muffin batter into each liner. Add a spoonful of the cream cheese mixture to the center of each muffin. Top with the remaining batter.
- Bake for 18-20 minutes, or until a toothpick inserted into the muffin comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
Notes
Use fresh blueberries for best results. Avoid overmixing the batter to prevent dense muffins. Ensure cream cheese is softened for a smooth filling. Store muffins in an airtight container in the refrigerator for up to 5 days.
