Instructions
- Cook the Pasta: Bring a large pot of salted water to boil. Cook your pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
- Prepare the Salmon: While pasta cooks, pat the salmon dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 3-4 minutes per side until cooked through. Remove from skillet and flake into bite-sized pieces.
- Make the Cream Sauce: In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
- Combine Everything: Add the cooked pasta to the cream sauce along with a splash of reserved pasta water to thin the sauce. Gently fold in the flaked salmon, lemon juice, and parsley. Season with additional salt, pepper, and red pepper flakes if using.
- Serve Immediately: Garnish with extra Parmesan, lemon zest, and fresh parsley. Serve hot and enjoy this comforting one pot pasta dinner!
Notes
Don't overcook the salmon - remove when still slightly pink. Use pasta water for silkier sauce. Season salmon, sauce, and taste before serving for layered flavor.
