- Prepare the chicken: Place chicken breasts between two pieces of plastic wrap and gently pound to an even 1/2-inch thickness. Season both sides with salt and pepper.
- Set up your breading station: Create three shallow bowls - one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese, garlic powder, oregano, and paprika.
- Bread the chicken: Dredge each chicken breast in flour, shaking off excess. Dip in egg mixture, then press firmly into breadcrumb mixture, coating completely. For extra crispiness, double-dip by repeating the egg and breadcrumb steps.
- Pan fry to perfection: Heat vegetable oil in a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through.
- Add toppings and finish: Transfer chicken to a baking sheet. Top each breast with marinara sauce and mozzarella cheese. Broil for 2-3 minutes until cheese is melted and bubbly.
