  • 1 cup shredded mozzarella cheese
  • 2 large eggs, scrambled
  • 1/4 cup diced bell peppers

  • 1/4 cup diced onions
  • 1/4 cup cooked sausage crumbles (beef or chicken)
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Place the English muffin halves cut-side up on the prepared baking sheet. Lightly toast them in the oven for 3-4 minutes until slightly crispy.
  3. While the muffins are toasting, heat olive oil in a skillet over medium heat. Add diced onions, bell peppers, and mushrooms. Sauté for 3-4 minutes until softened.
  4. Add the cooked sausage crumbles to the skillet and heat through. If using raw sausage, cook it thoroughly before adding to the vegetables.
  5. In a separate bowl, scramble the eggs and cook them in the skillet until just set. Season with salt and pepper.
  6. Remove the toasted English muffins from the oven. Spread about 1 tablespoon of pizza sauce on each muffin half.
  7. Top each muffin with the scrambled egg mixture, followed by the vegetable and sausage mixture.
  8. Sprinkle shredded mozzarella cheese evenly over each pizza. Add a pinch of Italian seasoning.
  9. Return the baking sheet to the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh herbs if desired and serve immediately.
