- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- Place the English muffin halves cut-side up on the prepared baking sheet. Lightly toast them in the oven for 3-4 minutes until slightly crispy.
- While the muffins are toasting, heat olive oil in a skillet over medium heat. Add diced onions, bell peppers, and mushrooms. Sauté for 3-4 minutes until softened.
- Add the cooked sausage crumbles to the skillet and heat through. If using raw sausage, cook it thoroughly before adding to the vegetables.
- In a separate bowl, scramble the eggs and cook them in the skillet until just set. Season with salt and pepper.
- Remove the toasted English muffins from the oven. Spread about 1 tablespoon of pizza sauce on each muffin half.
- Top each muffin with the scrambled egg mixture, followed by the vegetable and sausage mixture.
- Sprinkle shredded mozzarella cheese evenly over each pizza. Add a pinch of Italian seasoning.
- Return the baking sheet to the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh herbs if desired and serve immediately.
