- Preheat oven to 375°F (190°C). Split English muffins and arrange cut-side up on baking sheet lined with parchment paper. Lightly toast for 3-4 minutes until slightly crispy.
- Spread about 2 tablespoons of pizza sauce on each English muffin half. Sprinkle with mozzarella cheese, then add desired toppings including scrambled eggs, diced vegetables, and crumbled turkey bacon.
- Whisk eggs with salt and pepper in a bowl. Cook in non-stick skillet over medium heat, stirring frequently until softly scrambled but still moist (5-7 minutes).
- Spoon scrambled eggs evenly over prepared English muffin halves. Top with remaining cheeses, vegetables, and turkey bacon. Sprinkle with Italian seasoning.
- Bake assembled breakfast pizzas for 8-10 minutes until cheese is melted and bubbly and English muffin edges are golden brown. Optional: broil for last minute for extra crispiness.
- Remove from oven and let cool for 1-2 minutes before serving. Best enjoyed warm and fresh.
