Ingredients

Ingredients
  • 4 English muffins, split in half
  • 1 cup pizza sauce or marinara sauce
  • 8 eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup sliced black olives
  • 1/4 cup diced onions
  • 6 slices turkey bacon, cooked and crumbled
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cooking spray or olive oil

Method

Instructions
  1. Preheat oven to 375°F (190°C). Split English muffins and arrange cut-side up on baking sheet lined with parchment paper. Lightly toast for 3-4 minutes until slightly crispy.
  2. Spread about 2 tablespoons of pizza sauce on each English muffin half. Sprinkle with mozzarella cheese, then add desired toppings including scrambled eggs, diced vegetables, and crumbled turkey bacon.
  3. Whisk eggs with salt and pepper in a bowl. Cook in non-stick skillet over medium heat, stirring frequently until softly scrambled but still moist (5-7 minutes).
  4. Spoon scrambled eggs evenly over prepared English muffin halves. Top with remaining cheeses, vegetables, and turkey bacon. Sprinkle with Italian seasoning.
  5. Bake assembled breakfast pizzas for 8-10 minutes until cheese is melted and bubbly and English muffin edges are golden brown. Optional: broil for last minute for extra crispiness.
  6. Remove from oven and let cool for 1-2 minutes before serving. Best enjoyed warm and fresh.

Notes

Customize with different cheeses, add sliced mushrooms or spinach. Can be made ahead and frozen before baking. For extra crispy English muffins, lightly butter or oil cut sides before toasting to prevent sogginess. Can use whole eggs instead of scrambled by creating wells in toppings.
