- Gather all ingredients and measure them out. Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium saucepan over low heat, combine the peanut butter and honey. Stir continuously until smooth and well combined. Remove from heat and stir in vanilla extract.
- In a large bowl, combine the Cheerios, rolled oats, and salt. Add the warm peanut butter mixture and stir until everything is evenly coated. If using chocolate chips, fold them in last.
- Transfer the mixture to your prepared pan and press down firmly with the back of a spoon or your hands. Refrigerate for at least 2 hours or until firm. Cut into bars or squares once set.
Notes
These bars freeze beautifully! Wrap individual bars in plastic wrap and store in a freezer bag for up to 3 months. Substitute sunflower seed butter for peanut butter if allergies are a concern.
