  • 3 cups Cheerios cereal (or similar oat-based cereal)
  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup rolled oats
  • 1/4 cup mini chocolate chips (optional)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
  1. Gather all ingredients and measure them out. Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium saucepan over low heat, combine the peanut butter and honey. Stir continuously until smooth and well combined. Remove from heat and stir in vanilla extract.
  3. In a large bowl, combine the Cheerios, rolled oats, and salt. Add the warm peanut butter mixture and stir until everything is evenly coated. If using chocolate chips, fold them in last.
  4. Transfer the mixture to your prepared pan and press down firmly with the back of a spoon or your hands. Refrigerate for at least 2 hours or until firm. Cut into bars or squares once set.

Notes

These bars freeze beautifully! Wrap individual bars in plastic wrap and store in a freezer bag for up to 3 months. Substitute sunflower seed butter for peanut butter if allergies are a concern.
