- Prepare your ingredients and preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a large mixing bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Add softened butter, brown sugar, and granulated sugar to the same bowl and mix until creamy and smooth.
- Beat in the egg and vanilla extract until fully incorporated.
- Stir in the oats until evenly distributed, then fold in optional raisins or chocolate chips if using.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes until edges are golden brown.
- Let cookies cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
Notes
Use softened butter (not melted) for best texture. Don't overbake - remove when edges are golden but centers look slightly underdone for maximum chewiness. Cookies can be customized with nuts, dried cranberries, or other mix-ins.
