- Prepare the fruits by cutting the watermelon into bite-sized cubes and slicing the peaches. Remove the pits from the peaches and cut them into similar-sized pieces as the watermelon.
- In a small bowl, whisk together the lime juice, honey, and sea salt until well combined. This simple dressing will enhance the natural sweetness of the fruits.
- Combine the watermelon and peach pieces in a large mixing bowl. Gently toss them together to distribute evenly.
- Pour the lime-honey dressing over the fruit mixture and toss gently to coat all pieces. Be careful not to crush the delicate fruit.
- Add the chopped mint leaves and optional feta cheese, then give one final gentle toss. Serve immediately or chill for 30 minutes to allow flavors to meld.
Notes
Choose ripe but firm fruit for best texture. Chill for 30 minutes before serving to allow flavors to develop. Can be prepared with fruit and dressing stored separately up to a day in advance.
