  • 1 1/2 cups golden Oreo cookies (cream removed)
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt

  1. Preheat oven to 350°F (175°C). Prepare vanilla cake mix according to package directions with added teaspoon of vanilla extract. Grease 9x13 inch baking pan and pour batter evenly into bottom.
  2. Combine diced strawberries, sugar, cornstarch, and lemon juice in saucepan. Cook over medium heat for 5-7 minutes, stirring frequently, until thickened. Remove from heat and cool for 10 minutes.
  3. Place golden Oreo cookies (without cream) in food processor to create fine crumbs. Mix cookie crumbs with flour, brown sugar, melted butter, and salt until well combined.
  4. Spread cooled strawberry filling evenly over cake batter. Sprinkle cookie crumble topping evenly over strawberry layer. Bake 35-40 minutes until topping is golden brown and toothpick comes out clean.
  5. Allow cake to cool completely before slicing. Refrigerate for at least 2 hours to allow layers to set. Serve with fresh strawberries and whipped cream if desired.
