  1. Prepare the vegetables and fruits. Wash the cucumbers and strawberries thoroughly. Thinly slice the cucumbers using a mandoline or sharp knife. Hull the strawberries and cut them into quarters. If using red onion, slice it very thinly.
  2. Make the dressing. In a small bowl, whisk together the honey (or maple syrup), fresh lime juice, olive oil, sea salt, and black pepper until well combined.
  3. Combine ingredients. In a large mixing bowl, gently toss the cucumber slices, strawberry pieces, chopped mint, and red onion (if using) together.
  4. Dress the salad. Pour the dressing over the cucumber and strawberry mixture and toss gently to coat all ingredients evenly. Be careful not to crush the strawberries.
  5. Chill and serve. For best flavor, refrigerate the salad for 10-15 minutes before serving to allow the flavors to meld together. Serve chilled.

Notes

Use English or Persian cucumbers for best results. Prepare just before serving to maintain crisp texture. Can substitute basil for mint or add feta cheese for savory twist. Prep ingredients ahead but combine with dressing right before serving.
