  1. Pat chicken breasts dry with paper towels and season both sides with salt, pepper, paprika, and thyme.
  2. Heat oil in a large skillet over medium-high heat until shimmering.
  3. Add chicken breasts to the hot skillet and cook for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  4. Remove chicken from skillet, add onions and peppers, and cook for 3-4 minutes until softened.
  5. Return chicken to skillet, add garlic and broth, then cover and simmer for 2-3 minutes.
  6. Garnish with fresh parsley and serve immediately.

Notes

For even cooking, pound chicken breasts to consistent thickness or slice horizontally into cutlets. Don't overcook - remove from heat as soon as it reaches 165°F internally. Let chicken rest for 5 minutes before slicing to retain juices.
