  • 2 large tomatoes, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil

  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface. Transfer it to the prepared baking sheet.
  3. Using a sharp knife, lightly score a border about 1/2 inch from the edge of the pastry. Be careful not to cut all the way through.
  4. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the pastry, staying within the scored border.
  5. Place the tomato slices on top of the cheese, overlapping slightly. Drizzle with olive oil and sprinkle with dried oregano, dried basil, salt, and pepper.
  6. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the cheese is bubbly.
  7. Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.

Notes

For the best flavor, use ripe, in-season tomatoes. Pat the tomato slices dry with a paper towel to prevent a soggy crust. Add garlic powder or red pepper flakes for extra flavor. Serve warm for the best experience.
