- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper
- Arrange the split English muffins on the baking sheet, cut side up
- Spread about 1 tablespoon of pizza sauce onto each muffin half
- Crack one egg onto each muffin half, being careful to keep the yolk intact
- Sprinkle vegetables and other toppings evenly over each pizza
- Top generously with shredded cheese
- Season with salt and pepper to taste
- Bake for 12-15 minutes, or until eggs are cooked to your liking and cheese is bubbly
- Garnish with fresh basil and serve immediately
Notes
Choose whole wheat English muffins for extra fiber or sourdough for tangy flavor. Lightly toast muffins before adding toppings for extra crispiness. For runny yolks bake 12 minutes, for firm yolks bake 15 minutes. Can be prepped ahead without eggs and refrigerated overnight.
