- Start by rinsing the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy. Finely chop the onion, mince the garlic, and zest and juice your lemons.
- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the rinsed rice to the saucepan and stir constantly for 2-3 minutes until the rice grains become slightly toasted and fragrant.
- Pour in the broth, lemon juice, dried oregano, salt, and pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
- Once the rice has absorbed all the liquid, remove from heat and let it sit covered for 5 minutes. Fluff with a fork, then gently fold in the lemon zest, fresh dill, and parsley. If using, sprinkle toasted pine nuts over the top.
- Transfer your vibrant Greek lemon rice to a serving dish and garnish with additional fresh herbs and lemon wedges. Serve warm as the perfect complement to your main course.
