Ingredients

Ingredients
  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup vegetable broth

Method

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.
  2. Season the chicken breasts with salt, pepper, dried oregano, and dried basil. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear the chicken for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining olive oil. Sauté the diced onion and minced garlic until fragrant, about 2 minutes. Add the sliced zucchini and cook for another 3-4 minutes until slightly softened.
  4. Place the seared chicken breasts in the prepared baking dish. Arrange the sautéed zucchini, onion, and garlic around the chicken. Pour the vegetable broth over the top to keep the dish moist.
  5. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the chicken and vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  7. Let the dish rest for a few minutes before serving. Garnish with fresh herbs if desired.

Notes

Use fresh ingredients for the best flavor. Customize the cheese or add more vegetables like bell peppers or mushrooms. The dish can be prepared ahead of time and refrigerated until ready to bake.
