  • 2 lbs baby potatoes, quartered
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for garnish

  1. Prepare Ingredients: Rinse and pat dry chicken. Quarter potatoes evenly.
  2. Layer in Crockpot: Place potatoes at the bottom of the crockpot, then arrange chicken on top.
  3. Mix Seasonings: Combine garlic, Parmesan, Italian seasoning, salt, and pepper with chicken broth.
  4. Pour Over: Drizzle the seasoning mixture over chicken and potatoes.
  5. Cook: Cover and cook on high for 4 hours or low for 6-7 hours.
  6. Serve: Garnish with fresh parsley and additional Parmesan if desired.

Notes

Layer heartier vegetables and potatoes at bottom for even cooking. Don't overcrowd ingredients. Low setting develops deeper flavors. Can use frozen chicken (add 1-2 hours cooking time).
