- Prepare the potatoes by washing and quartering them. Place them in the bottom of your crockpot.
- In a small bowl, mix together the parmesan cheese, minced garlic, Italian seasoning, paprika, black pepper, and salt.
- Rub the chicken breasts with olive oil, then coat them evenly with the parmesan seasoning mixture.
- Place the seasoned chicken breasts on top of the potatoes in the crockpot.
- Pour the chicken broth around the sides of the crockpot (not directly over the chicken to preserve the crust).
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
For crispier chicken: broil for 2-3 minutes after cooking. Add vegetables like carrots or green beans during last hour. Recipe scales well for crowds. Can prepare seasoning mixture and potatoes ahead of time.
