  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, quartered
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1/4 cup chicken broth
  • Fresh parsley for garnish (optional)

  1. Prepare the potatoes by washing and quartering them. Place them in the bottom of your crockpot.
  2. In a small bowl, mix together the parmesan cheese, minced garlic, Italian seasoning, paprika, black pepper, and salt.
  3. Rub the chicken breasts with olive oil, then coat them evenly with the parmesan seasoning mixture.
  4. Place the seasoned chicken breasts on top of the potatoes in the crockpot.
  5. Pour the chicken broth around the sides of the crockpot (not directly over the chicken to preserve the crust).
  6. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is cooked through and potatoes are tender.
  7. Garnish with fresh parsley before serving.

Notes

For crispier chicken: broil for 2-3 minutes after cooking. Add vegetables like carrots or green beans during last hour. Recipe scales well for crowds. Can prepare seasoning mixture and potatoes ahead of time.
