  • 4 ripe peaches, halved and pitted
  • 4 cups arugula
  • 1 ball burrata cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup balsamic glaze
  • 2 tbsp olive oil

  1. Preheat your grill or grill pan to medium-high heat. Brush the peach halves with olive oil and place them cut-side down on the grill. Cook for 2-3 minutes until char marks appear. Flip and grill for another 1-2 minutes. Remove from heat and let cool slightly.
  2. In a large bowl, combine the arugula and fresh basil leaves. Tear the burrata cheese into small pieces and scatter it over the greens. Add the grilled peach halves.
  3. Drizzle the balsamic glaze over the salad and season with salt and pepper to taste. Gently toss to combine and serve immediately.

Notes

Choose ripe but firm peaches for grilling to prevent them from becoming too soft. For extra flavor, add a sprinkle of toasted nuts or seeds, such as almonds or pumpkin seeds. If you don't have balsamic glaze, reduce balsamic vinegar in a small saucepan until it thickens.
