  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or pecans (optional)

  1. Preheat your oven to 375°F (190°C). In a medium bowl, toss the sliced apples with lemon juice to prevent browning. Add maple syrup, cinnamon, vanilla extract, and cornstarch. Mix thoroughly until all apple slices are evenly coated.
  2. In a separate bowl, combine oats, almond flour, cinnamon, and salt. Add the melted coconut oil and maple syrup, mixing until the ingredients form a crumbly texture. If using nuts, fold them in at this stage.
  3. Transfer the apple mixture to a baking dish (8x8 inch works well). Spread the crumble topping evenly over the apples. Bake for 25-30 minutes, or until the topping is golden brown and the apples are tender when pierced with a fork.
  4. Allow the crumble to cool for 5-10 minutes before serving. It can be enjoyed warm or at room temperature. For extra protein, serve with Greek yogurt or a dollop of coconut cream.
