- Preheat your oven to 375°F (190°C). In a medium bowl, toss the sliced apples with lemon juice to prevent browning. Add maple syrup, cinnamon, vanilla extract, and cornstarch. Mix thoroughly until all apple slices are evenly coated.
- In a separate bowl, combine oats, almond flour, cinnamon, and salt. Add the melted coconut oil and maple syrup, mixing until the ingredients form a crumbly texture. If using nuts, fold them in at this stage.
- Transfer the apple mixture to a baking dish (8x8 inch works well). Spread the crumble topping evenly over the apples. Bake for 25-30 minutes, or until the topping is golden brown and the apples are tender when pierced with a fork.
- Allow the crumble to cool for 5-10 minutes before serving. It can be enjoyed warm or at room temperature. For extra protein, serve with Greek yogurt or a dollop of coconut cream.
