  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze (optional)

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet and prick the surface all over with a fork.
  3. In a medium bowl, combine the ricotta cheese, grated Parmesan, egg, minced garlic, salt, and pepper. Mix until smooth and well combined.
  4. Spread the ricotta mixture evenly over the puff pastry, leaving a small border around the edges. Arrange the sliced heirloom tomatoes on top of the ricotta mixture, overlapping slightly. Drizzle with olive oil and sprinkle with chopped basil.
  5. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the tomatoes are slightly softened.
  6. Remove the tart from the oven and let it cool slightly. Drizzle with balsamic glaze if desired, then slice and serve warm.

Notes

Choose ripe, firm heirloom tomatoes for the best results. For extra flavor, sprinkle red pepper flakes or dried oregano over the tomatoes before baking. You can prepare the ricotta filling and slice the tomatoes ahead of time. Assemble the tart just before baking for the freshest taste.
