  • 2 chicken breasts (boneless/skinless)
  • 2 tbsp hot honey
  • 1 tbsp avocado oil
  • 2 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ¼ tsp salt
  • 4 cups romaine lettuce (chopped)
  • ½ cup cherry tomatoes (halved)
  • 1 large avocado (sliced)
  • ½ medium red onion (sliced)
  • ½ medium cucumber (sliced)
  • ½ cup frozen corn (thawed)
  • ½ cup hot honey vinaigrette

Method
 

Instructions
  1. Marinate the chicken: Stir together the 2 tbsp hot honey, 1 tbsp oil, apple cider vinegar, garlic powder, smoked paprika, chili powder, and salt in a ziplock bag or medium bowl. Toss the chicken until well coated, and allow to marinate in the fridge for at least 6 hours or overnight.
  2. Grill the chicken: Preheat your grill to 450°. Place the chicken on the grill and cook for 10 minutes. After 10 minutes, flip the chicken and cook an additional 5-6 minutes, or until the chicken reaches an internal temperature of 165°. Transfer the grilled chicken to a plate and allow to cool for about 10 minutes. Once cool enough to handle, slice and set aside.
  3. Meanwhile, make a batch of homemade hot honey vinaigrette and set aside.
  4. Assemble your salads with lettuce, tomatoes, avocado, red onion, cucumber, corn, and grilled hot honey chicken. Drizzle with hot honey vinaigrette and serve!

Notes

Marinate chicken overnight for best flavor. Store components separately for meal prep. Salad can be customized with different vegetables like bell peppers or sweet potatoes.
