- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy
- Beat in the eggs one at a time, then add the vanilla extract
- Gradually mix in the dry ingredients until just combined
- Stir in the rolled oats and any optional add-ins like raisins or chocolate chips
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto prepared baking sheets, spacing them about 2 inches apart
- Bake for 10-12 minutes, or until the edges are golden brown but centers still look slightly underdone
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
Notes
Chill dough for 30 minutes before baking for extra thick cookies. Don't overbake - cookies should look slightly underdone in center when removed from oven. Use room temperature ingredients for best texture.
