  • 1 pound boneless, skinless chicken breasts, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and diced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado

  1. Sauté the Base: Heat olive oil in a large pot over medium-high heat. Add diced chicken and cook until lightly browned, about 5-7 minutes.
  2. Add Aromatics: Stir in chopped onion, garlic, and jalapeño. Cook for 3-4 minutes until vegetables have softened.
  3. Combine Ingredients: Add white beans, green chilies, chicken broth, cumin, oregano, salt, and pepper. Bring to a simmer.
  4. Simmer and Thicken: Reduce heat to medium-low and simmer for 15-20 minutes, stirring occasionally, until chili has thickened slightly.
  5. Adjust and Serve: Taste and adjust seasoning if needed. Serve hot with your favorite toppings.

Notes

Mash a small portion of the beans before adding for extra creaminess. Use pre-cooked shredded chicken to save time. Remove jalapeño seeds for milder heat or leave in for spicier chili.
