  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper to taste
  • Optional: 1/4 cup crumbled feta cheese or sliced red onion

  1. Prepare the vegetables and fruit. Wash the cucumbers and strawberries thoroughly. Thinly slice the cucumbers (you can peel them if desired) and hull and slice the strawberries. Chop the fresh mint leaves.
  2. Make the dressing. In a small bowl, whisk together the olive oil, fresh lime juice, honey (or maple syrup), and a pinch of salt and pepper. Taste and adjust seasoning as needed.
  3. Combine the salad. In a large mixing bowl, gently toss the sliced cucumbers, strawberries, and chopped mint together. Be careful not to crush the strawberries.
  4. Dress and serve. Drizzle the dressing over the salad and toss gently to combine. Serve immediately for the freshest taste, or refrigerate for up to 30 minutes to allow flavors to meld.

Notes

Prepare ingredients and dressing separately, then combine just before serving to maintain maximum crispness. Organic strawberries recommended due to pesticide concerns. For best texture, serve within 30 minutes of preparation.
