  1. Wash the cucumber and strawberries thoroughly. Thinly slice the cucumber using a sharp knife or mandoline. Hull the strawberries and cut them into quarters. If using larger strawberries, you may want to cut them into smaller pieces for even distribution.
  2. In a large mixing bowl, combine the sliced cucumber and quartered strawberries. Gently toss them together to distribute evenly. Be careful not to crush the strawberries while mixing.
  3. In a small bowl or jar, whisk together the olive oil, lemon juice, and honey until well combined. The honey helps balance the acidity of the lemon and enhances the natural sweetness of the strawberries.
  4. Pour the dressing over the cucumber and strawberry mixture. Add the chopped mint leaves and crumbled feta cheese. Gently toss everything together until well coated with the dressing. Season with salt and pepper to taste.
  5. Transfer the salad to a serving bowl. If using, sprinkle toasted pine nuts or sliced almonds over the top for added crunch. Serve immediately or chill for 15-30 minutes to allow the flavors to meld together.
