- In a large mixing bowl, gently combine the dragon fruit, mango, strawberries, blueberries, raspberries, and grapes. Be careful not to crush the softer fruits like raspberries.
- In a small bowl, whisk together the maple syrup, fresh lime juice, and grated ginger if using. This creates a light, refreshing dressing that won't make the fruit soggy.
- Drizzle the dressing over the fruit mixture and toss gently to coat. Add the chopped mint leaves and give one final gentle toss.
- For best flavor, let the salad sit for 10-15 minutes before serving to allow the flavors to meld together. Serve chilled.
