Ingredients

Ingredients
  • 1 medium dragon fruit, cubed
  • 2 ripe mangoes, diced
  • 2 cups fresh strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup green grapes, halved
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons pure maple syrup
  • 2 tablespoons fresh lime juice
  • 1 teaspoon grated ginger (optional)

Method

Instructions
  1. Prepare all fruits by washing them thoroughly. Cube the dragon fruit, dice the mangoes, hull and halve the strawberries, and halve the grapes if using larger varieties.
  2. In a large mixing bowl, gently combine the dragon fruit, mango, strawberries, blueberries, raspberries, and grapes. Be careful not to crush the softer fruits like raspberries.
  3. In a small bowl, whisk together the maple syrup, fresh lime juice, and grated ginger if using. This creates a light, refreshing dressing that won't make the fruit soggy.
  4. Drizzle the dressing over the fruit mixture and toss gently to coat. Add the chopped mint leaves and give one final gentle toss.
  5. For best flavor, let the salad sit for 10-15 minutes before serving to allow the flavors to meld together. Serve chilled.

Notes

For best results, choose fruits that are ripe but still firm. Let the salad sit for 10-15 minutes before serving to allow flavors to meld. The salad can be prepared up to 2 hours in advance.
