  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until browned, about 5-6 minutes. Remove from skillet and set aside.
  2. In the same skillet, add the diced onion, bell peppers, and celery. Sauté until vegetables begin to soften, about 4-5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the rice, Cajun seasoning, smoked paprika, thyme, and oregano. Cook for 2 minutes, stirring constantly to coat the rice with the spices and oil.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Return the cooked chicken sausage to the skillet. Stir everything together and cook for another 2-3 minutes until heated through. Season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve immediately.

Notes

Customize the heat level by using mild or hot Cajun seasoning. The dish stores well for up to 4 days and reheats beautifully. Brown rice can be substituted but requires additional cooking time.
