  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, mash the banana until smooth. Add the maple syrup, melted coconut oil, and vanilla extract. Stir until well combined.
  3. In a separate bowl, combine the oats, cinnamon, baking powder, and salt. If you're adding chocolate chips or other mix-ins, add them now.
  4. Add the dry ingredients to the wet ingredients and mix until everything is well incorporated. The mixture should be thick but moist.
  5. Transfer the mixture to your prepared baking pan. Press it down firmly and evenly using your hands or the back of a spoon. Bake for 20-25 minutes, or until the edges are golden brown.
  6. Let the bars cool completely in the pan before cutting into squares.

Notes

Use very ripe bananas with brown spots for maximum sweetness and flavor. Store bars in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
