- Preheat oven to 350°F (175°C). Soften cream cheese to room temperature. Use pre-cooked chicken or poach chicken breasts/use rotisserie chicken.
- In a large mixing bowl, combine softened cream cheese, ranch dressing, and buffalo sauce. Blend until smooth and creamy using a hand mixer or spoon.
- Fold in shredded chicken, cheddar cheese, mozzarella cheese, and blue cheese crumbles (if using). Mix until evenly distributed.
- Transfer mixture to an oven-safe baking dish and spread evenly. Bake for 20-25 minutes until bubbly around edges and cheese is melted throughout.
- Remove from oven, let cool for 5 minutes. Sprinkle with chopped green onions and serve warm with tortilla chips, celery sticks, or favorite dippers.
Notes
Use rotisserie chicken for best flavor. Adjust buffalo sauce for preferred heat level. Can be made 24 hours ahead and refrigerated before baking.
