- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and sugars together in a large mixing bowl until light and fluffy. This should take about 2-3 minutes.
- Add the eggs and vanilla to the butter mixture, beating until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the oats and raisins or chocolate chips (if using) until evenly distributed.
- Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers look set.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Use room temperature butter for easier mixing and a smoother dough. Chill the dough for 30 minutes before baking if you prefer thicker cookies. Don't overbake—oatmeal cookies continue to set as they cool, so pull them out when the edges are just golden. Customize your cookies by adding nuts, dried fruits, or even a sprinkle of sea salt on top.
