  • 1 pound turkey sausage or breakfast sausage (pork-free)
  • 1 cup shredded cheddar cheese

  • 1/2 cup diced onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or butter. If using frozen hash browns, thaw them according to package directions. Brown the turkey sausage in a skillet over medium heat, breaking it into crumbles as it cooks. Drain any excess grease.
  2. In a large bowl, whisk together the eggs and milk until well combined. Season with garlic powder, paprika, salt, and pepper. Stir in the thawed hash browns, cooked sausage, diced peppers, onions, and half of the shredded cheese.
  3. Pour the mixture into your prepared baking dish, spreading it evenly. Top with the remaining cheese. For make-ahead preparation, cover the dish with plastic wrap and refrigerate overnight at this point.
  4. Bake for 35-45 minutes, or until the eggs are set and the top is golden brown. A knife inserted in the center should come out clean. Let the casserole rest for 5-10 minutes before serving to allow it to set properly.

Notes

For make-ahead convenience, assemble the night before and refrigerate. Let sit at room temperature for 20-30 minutes before baking. Thaw hash browns completely to prevent excess moisture. Let casserole rest before serving for easier cutting.
