- Cook the pasta according to package directions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt, pepper, and Italian seasoning. Cook chicken until golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Pour in chicken broth to deglaze the pan, scraping up any browned bits.
- Reduce heat to medium and add heavy cream, stirring constantly. Bring to a gentle simmer and cook for 2-3 minutes until slightly thickened.
- Stir in Parmesan cheese until melted and smooth. Add the cooked chicken back to the skillet along with the cooked pasta. Toss everything together, adding a splash of reserved pasta water if needed to create a creamy sauce that coats everything evenly.
- Garnish with fresh parsley and additional Parmesan cheese before serving immediately.
Notes
Use freshly grated Parmesan cheese rather than pre-shredded for smoother melting. Add sautéed mushrooms or spinach for extra flavor and nutrition.
