1 ½ cups graham cracker crumbs
½ cup sugar
½ cup unsalted butter, melted
2 (8 oz) packages cream cheese
1 cup sour cream
3 large eggs
½ cup caramel sauce
2 cups sliced apples
Preheat your oven to 325°F (160°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
Bake the crust for about 10-12 minutes until lightly toasted. Let it cool.
In a large mixing bowl, beat the cream cheese until smooth, gradually add sugar, then sour cream, and incorporate eggs one at a time.
Stir in ¼ cup of caramel sauce into the filling.
Gently fold in the sliced apples.
Pour the filling over the cooled crust and smooth the top.
Bake for 50-60 minutes until the center is set but slightly jiggly. Let cool in the oven with the door cracked.
After an hour, remove and refrigerate for at least 4 hours or overnight.
Before serving, drizzle with additional caramel sauce.
