1 lb ground beef or turkey
1 can black beans, drained
1 can corn, drained
1 can diced tomatoes
1 packet taco seasoning
4 cups chicken or vegetable broth
1 bell pepper, chopped
1 onion, chopped
Brown the Meat: In a large pot over medium heat, add your choice of ground meat. Cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.
Add Vegetables: Stir in chopped onion and bell pepper. Cook for about 5 minutes until the onion is translucent.
Combine Ingredients: Add in black beans, corn, diced tomatoes, taco seasoning, and broth. Stir to mix everything evenly.
Simmer: Increase heat, bringing the mixture to a boil. Once boiling, reduce heat to low and let it simmer for about 20-30 minutes.
Adjust Seasoning: Taste and adjust seasoning as necessary.
Serve: Spoon into bowls and top with your favorite toppings like shredded cheese, avocado, sour cream, or fresh cilantro. Enjoy warm!
