- In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well blended.
- Gently fold the chopped strawberries into the yogurt mixture, being careful not to overmix to maintain texture from the fresh fruit.
- Line a baking sheet with parchment paper. Using a tablespoon, drop spoonfuls of the yogurt mixture onto the prepared sheet, forming small clusters with space between each.
- Place the baking sheet in the freezer and freeze for at least 2 hours, or until the clusters are completely solid.
- In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and melted.
- Remove the frozen clusters from the freezer. Drizzle the melted chocolate over each cluster using a spoon or piping bag. Return to the freezer for 10 minutes to set the chocolate, then transfer to an airtight container for storage.
