- Prepare the vegetables by thinly slicing the cabbage using a sharp knife or mandoline, grating the carrots using the large holes of a box grater, and thinly slicing the red onion and bell pepper. Combine all vegetables in a large mixing bowl.
- Create the creamy slaw dressing by whisking together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, celery seeds, salt, pepper, and optional cayenne in a separate bowl. Taste and adjust seasoning.
- Combine and chill by pouring the dressing over the vegetable mixture and tossing thoroughly to coat evenly. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Before serving, taste the coleslaw and adjust seasoning if needed. Garnish with additional fresh parsley.
Notes
Don't drown the vegetables in dressing - coat them lightly so the natural crunch shines through. The coleslaw improves with time - prepare a few hours before serving for maximum flavor development.
