  1. Prepare the vegetables by thinly slicing the cabbage using a sharp knife or mandoline, grating the carrots using the large holes of a box grater, and thinly slicing the red onion and bell pepper. Combine all vegetables in a large mixing bowl.
  2. Create the creamy slaw dressing by whisking together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, celery seeds, salt, pepper, and optional cayenne in a separate bowl. Taste and adjust seasoning.
  3. Combine and chill by pouring the dressing over the vegetable mixture and tossing thoroughly to coat evenly. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
