1 lb chicken breast (shredded)
1 cup quinoa (rinsed)
4 cups chicken broth
1 cup carrots (diced)
1 cup celery (diced)
1 onion (chopped)
3 cloves garlic (minced)
Salt and pepper to taste
Rinse the quinoa under cold water. Chop the vegetables as outlined in the ingredients list.
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add chopped onions, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender.
Incorporate the shredded chicken into the pot, stirring well. Cook for another 2-3 minutes until heated through.
Stir in the rinsed quinoa and chicken broth. Bring the mixture to a boil, then reduce heat to low, covering the pot. Let it simmer for 15-20 minutes until the quinoa is fluffy and cooked through.
