Cowboy Cornbread Casserole

A hearty and delicious dish combining seasoned ground beef, black beans, and corn topped with fluffy cornbread, perfect for family dinners and gatherings.

  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 large eggs
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ¼ cup melted butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a 9×13 inch baking dish.
  3. In a skillet, brown the ground beef over medium heat for 7-10 minutes and drain excess fat.
  4. Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for an additional 5 minutes.
  5. Pour the beef mixture into the prepared baking dish.
  6. In a separate bowl, whisk together milk, eggs, cornmeal, baking powder, salt, and melted butter until smooth.
  7. Pour the cornbread batter over the beef mixture in the baking dish.
  8. Sprinkle shredded cheddar cheese on top.
  9. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  10. Let cool for a few minutes, slice into squares, and serve warm.

Notes

Customize with additional vegetables or spices as desired. Serve with a side salad or bread for a complete meal.
