Orange Cranberry Bread

A delightful bread that combines the bright flavor of oranges with the tartness of cranberries, perfect for any occasion.

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased loaf pan.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt; stir until well blended.
  3. Fold in chopped cranberries.
  4. In another bowl, whisk together orange juice, vegetable oil, eggs, orange zest, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients and mix lightly until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50 to 60 minutes, until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Make the glaze by combining powdered sugar and orange juice until smooth.
  10. Once cooled, drizzle the glaze over the bread, slice, and enjoy!

Notes

Use fresh cranberries for best flavor. Consider adding nuts or spices for variations.
