Quick Ham and Bean Soup

A hearty and budget-friendly soup packed with protein and fiber, perfect for quick weeknight meals.

  • 1 lb Ham (bone or diced)
  • 2 cups Beans (dry or canned)
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 6 cups Chicken broth or water
  • 2 Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Black pepper
  • 1/4 cup Fresh parsley

Instructions

  1. Chop the ham into bite-sized pieces and prepare the other vegetables by dicing the onion, slicing the carrots, chopping the celery, and mincing the garlic.
  2. In a large pot, heat a small amount of oil over medium heat and sauté the onion, carrots, and celery for about 5-7 minutes until softened; add the garlic and cook for another minute.
  3. Add the diced ham or ham bone to the pot.
  4. Pour in 6 cups of chicken broth or water and bring to a boil.
  5. Include the beans (soaked if dry), bay leaves, thyme, and black pepper; stir and bring to a boil.
  6. Reduce heat and let it simmer gently for about 30-45 minutes.
  7. Remove bay leaves and ham bone, shred meat from the bone and return it to the pot, adjusting seasoning as needed.
  8. Serve hot, garnished with chopped fresh parsley.

Notes

Great for using leftover ham; can be customized with different beans and vegetables.
