1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 can (15 oz) kidney beans
1 can (15 oz) corn
2 cups beef broth
1 tbsp taco seasoning
Salt and pepper to taste
Brown the Beef: In a large pot or Dutch oven, heat a bit of oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Sauté Aromatics: Add the diced onions and continue to cook for another 2-3 minutes until softened. Stir in the minced garlic and cook for an additional minute.
